X-wing vs TIE Fighter (w/ the Balance of Power expansion) also has outstanding opportunities. Especially if you can grab some of Wrench's campaign/mission sets! I like the game because it lets you fly for the Imps OR Rebels. That said, the original X-Wing and TIE Fighter games give you the best experience (from mission briefings to cut scenes and mission design etc). Just my humble opinion.
