Whatever I'm flying seems to want to bounce around. 'Can't keep the gun-sight on the target, even if the target is flying straight and level. 'Seems everything I do over-corrects. Where in WOFF can I adjust Scale/Speed settings?

In the other forum I believe to have seen a thread, where they mentioned the "Nullzone" settings.

But I'm sorry - I don't know where to set it up.

 

Tried it with "Wind: off" ? (Workshop)

Are you sure you don't have a Force Feedback stick ?

Finally found it. (not the easiest setting to access) Go to workshop (upper left corner) and click on Keys/Controller. That will bring up the big page. Follow the numbered boxes 1-4. No.4 will have the NullZone/Scale adjustments.

And what is a good setting to have? 

Probably every pilot will give you a different answer. I re-set mine (in the workshop) to Default and it didn't do much for me. Check out the SPAD & D.VII thread above.

Here's an answer about the Nullzone from a sim forum:
 

RE: What is null zone?
The size of the zone in which your joystick is centered; a large null zone will mean you have to move your stick a lot to get any movement in the controls,

a small null zone will mean that you will use the controls almost the whole time, unless exactly (depending on the size of your null zone) centered.

I suggest you leave it at default, like me. Works well.
