Amok Time and Doomsday Machine are great in that regard.

 

I also love the "voted #1" episode City on the Edge of Forever, as well as Balance of Terror.

Let's not forget the classic Space Seed!

Balance of Terror is what got me into TOS when I was growing up with TNG, but the space hippies were gold! Kirk went from being the man to being THE MAN. It was gold!
