On hard settings, how do you know the altitude of the current waypoint? I can't see anything on the Kfir's cockpit...

Before you start the mission you hover over the waypoints on the map screen. Each waypoint's speed (ground) and altitude will pop up.

 

I've used my laptop to note them while playing on my desktop; but a notepad works as well.

That's what I thought... I guess it all adds to the immersion factor :)

Pretty satisfying finding your target in Hard settings, anyway.
