For WW1 you need First Eagles 2, with mods being in that section of the forum.

Not to be a rivet (or should that be burger) counter, but unless you're going to add ActiveYear=xxxx for every branch, I think McDonalds in Europe might be a little too late for the 1960's terrain:
Now, if you had a Wimpy skin for the restaurant you could have them in England from 1954 and in the rest of Europe through the 1960's.

That's not to say that having McDonalds will stop me from flying over this beautiful looking terrain.

Set up a recon mission where the target is close to the carrier.
Take off, get a mission success when you fly through the target waypoint, and then you can practice your carrier landing.

There are some good valleys and canyons in these terrains that I regularly fly training missions over:

Also the Desert 4 terrain and it's various updates has a great , really deep and twisty canyon in the south near a Parani nuclear facility that's just perfect for a Top Gun: Maverick style mission to take it out!

I made a few edits to the parking on the Kitty Hawk to give a more crowded deck (this is slightly different to the version that I posted in the ODS30 thread so you will get a bit of variety in your different installs).

Make sure you're on the right approach angle, it's a pretty tight squeeze onto the deck...
And when you get down in one piece, I left a parking spot for you to taxi to..
