I think Stingers have a very short fighting distance. The plane will quickly and easily leave its range in combat. I saw many times how the MiG-29 leaves coverage of the SA-18 Grouse missile. I run SF2 without a joystick when testing how my work on a 3d model looks like, or when testing a skin. Sometimes I start flying while test and shoot down other planes when Im in deep thinks. if something interesting happens in the game I start to go a mission using the keyboard without a joystick .. It's quite possible to play. But, playing for always is not serious. Although if you love BDSM, you may like it. I'm not familiar at BDSM, but if I want to try, I'll start with playing simulators from the keyboard.

Yes you can partialy copy parts of ini from one aircraft to another from DATA to DATA files and it will change the flight model of AI. Try and watch what happens. Its interesting timespending by the way :)
