Whenever you want. I use them a lot during ACM especially with the F-14 and F-15, which have great rudder authority. They're especially helpful winging the nose around at low airspeeds and for commanded departures/recoveries.

I use the rudder to improve the turn radius. If you angle the plane correctly you can turn faster with the rudder added. It won't make the F-4 into a great dog fighter, but it helps.

I've also gotten good at using the rudder to toss curveball bombs in my Mighty, Beloved F-4E

sometimes handy on landings too - or just low speed in general.

But in the this game, I don't get the desired results when I start using them because it also induces a roll... Spoils accuracy. I guess I need more practice.

If you're using separate rudder pedals, you may need to make sure that the sim has not affected, say, aileron movements to your toe-brakes or something. Hand-editing your controls .ini can be a good move. Use notepad.

The rudder is very useful for dogfighting, but it really comes into its own for ground attack - as has been said above. Bringing the nose round a bit without losing your flight attitude and so on. Don't forget that if you're banking at 90°, the rudder becomes an elevator to help you keep your nose up.

The roll induced by yaw (rudder) is correct, it happens in RL, if you are maintaining rudder input and want to offset the induced roll you should use a little opposite aileron, this is part of the technique used in sideslipping, i use rudder alot in gunfights, used delicately it just helps put the sight right where you want it.

Rudder works great defensively as well.

Surprised more than a few friends who've ended up ahead of me without knowing how it happened just by using the rudders to throw off where they thought I was going verses where I did go...

Oh wait, that was real life...
