+Dave 2,322 Posted March 3, 2008 This is Singapore Chicken and Rice. (With a twist by me.) Rice is cooked in a wok with chicken fat, sesame seed oil, garlic, and chicken broth that came from the chicken that I boiled. The red stuff you see on the side is chili based with a shallot and 4 roma tomatoes all chopped in food processor. Very spicy. My twist on it is that I cook chicken pieces instead of boiling a whole chicken. Just easier for me. A very simple dish with tremendous results. And yes if you go to Singapore it is one their dishes of choice. I did find out though, that what you put on it is what makes the dish. Thus my red chile sauce. I had roast lamb, roast potatoes,broccolli,carrots with Appple Strudel & ice cream to follow. Lamb was a bit chewy but I've had worse. Good old English fare really and yes my misses can cook!
